mirin me

i have a crush on a new salad. i wanna eat it all the time. the first time i made it i butched it up a bit by ripping some poached lemongrassy chicken into it. but since then i've eaten it as intended and it still makes me swoon.

it comes from the lovely mister granger, via delicious magazine and c/- my wonderful mama:

pearl barley, broccoli & cashew salad with tamari dressing

5/4 cups pearl barley (or dinkel, as i'm pretty sure it's called in these parts)
400g broccoli, cut into florets
4 spring onions, thinly sliced
2 cups baby spinach leaves
1/2 cup ripped up mint leaves
1/3 cup toasted cashews, roughly chopped

dressing
1 tsp sesame oil
3/2 tbs tamari
3/2 tbs mirin
1 tsp finely grated ginger

cook the barley/dinkel in a large pan of lightly salted water for 25-30 minutes until al dente. drain then rinse under cold water.

blanch broccoli in a pan of boiling water for two minutes until bright green and just tender. rinse in cold water and drain well. whisk the dressing ingredients together and toss it through the rest of the salad.
